The Salad Blue heritage variety is oval in shape, with the skin and flesh both a strong deep blue colour. They have a fluffy textured flesh with a delicate flavour and are believed to be a result of Victorian amateur potato breeding in 1900. The name is confusing though – they are not a salad potato, rather a fluffy one
Blue through and through – makes great chips, crisps, mash and a as part of a colourful mixed wedge.Β They are best cooked with the skin on to retain their colour.Β A gentle flavour and good texture make this floury potato popular with chefs.
