Method

This recipe is perfect for a filling lunch but for less than 200 calories! Containing potatoes, ham and onion it has a great silky smooth taste.

  1. Melt the butter in a medium saucepan, add the onion and potatoes and cook for about 5 minutes. Now add the parsley, half the chives and the stock. Bring to a steady simmer and cook for 10 minutes or until the potatoes are soft.
  2. Add the milk and then blend the soup until smooth and season.
  3. Serve the soup with the chopped ham and garnish with the remaining chives.

400g Fluffy potatoes (such as Maris Piper or King Edward), peeled and cut into small cubes

25g butter

1 onion, peeled and finely chopped

1 teaspoon freshly chopped parsley

2 teaspoon freshly chopped chives

750ml hot vegetable stock

200ml full fat milk

2 slices of roast ham, roughly chopped

400g Fluffy potatoes (such as Maris Piper or King Edward), peeled and cut into small cubes 25g butter 1 onion, peeled and finely chopped 1 teaspoon freshly chopped parsley 2 teaspoon freshly chopped chives 750ml hot vegetable stock 200ml full fat milk 2 slices of roast ham, roughly chopped
