400g Fluffy potatoes (such as Maris Piper or King Edward), peeled and cut into small cubes
1 onion, peeled and finely chopped
1 teaspoon freshly chopped parsley
2 teaspoon freshly chopped chives
750ml hot vegetable stock
200ml full fat milk
2 slices of roast ham, roughly chopped
