Potato and Beef Mince Hash

Simple ingredients, great flavours. Ideal as a brunch option or a dish for a family to share.

  1. Place the potatoes in a large pan of boiling water. Boil for 6 minutes then and drain.
  2. Meanwhile heat 1 teaspoon oil in a large non-stick frying pan over a medium heat and fry the onion and garlic for 5 minutes until soft. Increase the heat to high and add the beef mince. Fry for 5 minutes until beginning to brown. Remove from the pan and set aside.
  3. Heat the remaining oil and the potatoes and rosemary for 5 minutes until beginning to colour. Return the beef mince, season and cook for a further 5 minutes. Serve topped with a poached egg.

Tip :
Roasted cherry tomatoes works well with the hash too.


800g smooth potatoes, such as Desiree, cubed
2 teaspoon olive oil
1 large onion, peeled and finely chopped
2 garlic cloves, peeled and crushed
390g extra lean beef mince
2 tablespoons freshly chopped rosemary
4 poached eggs, optional
