One Pot Potato & Pork Chilli Recipe

  1. Heat the oil in a large saucepan and fry the pork and pepper for 5 minutes.
  2. Add the potatoes, kidney beans and chilli con carne sauce. Rinse the jar with a little water and add to the pan.
  3. Bring to the boil, cover and simmer for 25 minutes or until potatoes and pork are cooked through. Serve immediately.


For vegetarians replace the pork with a meat alternative such as diced quorn, adding it to the pan for the last 5 minutes.

This dish is suitable for freezing, simply cool, transfer to a plastic food container with a lid and freeze.  Defrost in the fridge overnight and cook through until piping hot before serving.


800g medium smooth potatoes (such as Desirée), diced

1 tablespoon oil

500g lean pork leg cubes

1 yellow pepper, deseeded and  diced

1 x 410g can kidney beans, drained and rinsed

1 x 500g jar chilli con carne sauce
