Method

Potato salad is an all year round favourite and easy to rustle up in bulk making it an ideal dish for barbecues, parties or Christmas family dinners. This simple Creamy New Potato Salad recipe ensures yumminess every time with the help of crème fraiche, mayonnaise and beautiful salad potatoes. 

  1. Put the potatoes in a pan of lightly salted boiling water. Cover and simmer for 15 minutes or until tender.  Drain and allow to cool.
  2. In a bowl mix together the remaining ingredients, add the potatoes, season to taste and stir gently until combined.  
  3. Serve immediately.

Tip: Great for barbecues and parties, simply scale up the recipe by 3 to serve 12.
Why not serve with a selection of ready prepared potato products such as wedges or crisps.

500g salad potatoes (eg, Charlotte, Maris Peer), scrubbed and halved

1 tablespoon half fat crème fraiche

1 tablespoon reduced fat mayonnaise

1 red onion, peeled and finely chopped

1 teaspoon lemon juice

2 tablespoons freshly chopped chives
