Method

Simple ingredients, and really easy to cook – this Potatoes with Corned Beef Hash recipe will definitely make you see a traditional store cupboard staple in a whole new light!

  1. Place the potatoes in a pan, add boiling water,   Cover and simmer for 10 minutes or until just cooked. Drain.
  2. Heat the oil in a large frying pan and sauté the potatoes for 10 minutes until golden. Add the onion and fry for 5 minutes.
  3. Stir in the corned beef, sweetcorn, seasoning and Worcestershire sauce and return to the heat for 10 minutes or until piping hot.
  4. Serve with a poached egg.

Ingredients

675g smooth potatoes e.g. Desiree, cubed

2 tablespoons sunflower oil

1 onion, peeled and chopped

1 x 340g tin corned beef, diced

1 x 195g can sweetcorn in water, drained

2 teaspoons Worcestershire sauce

4 eggs (optional)
