Easter is a great time of year for the range of friends and family you get to see over the long weekend, but equally as great due to the amount of leftovers we’re gifted from roast dinners and the amount of food we dine on. There are tonnes of inventive ways you can use these to create brand new dishes! Here are some below:

Leftover Potato Hash

Leftover Lamb Hotpot

Easter Monday is all about putting your feet up and relaxing! After a few days of eating chocolate eggs and cooking you deserve a little bit of a time to unwind. Luckily this leftover lamb hotpot is relatively low maintenance - you should already have all your ingredients to hand (providing you didn't eat up every scrap of the Sunday roast) and can mostly be left to cook on its own in a slow-cooker. The patient cooking time allows the lamb to mingle with the beef stock, spuds and veg which surrounds it. A scrumptious home comfort!

We love a mini roast, they are easy, delicious and ready in under an hour. Even better than that, once it's in the oven, you can get on with something else entirely. You may have seen them in the shops as easy carve or small roasting joints but they’re all the same really, delicious joints of beef or lamb you know and love, just smaller!

Why wait til Sunday?

We think you’ll agree when we say there’s not much better than a crispy, fluffy, piping-hot roast potato on your plate. Spuds are an essential part of any roast and getting them right can make or break the meal! With this in mind we thought it would be a good idea to have a look at a few tips on how to make perfect and delicious roast potatoes.

Put on the oven, whack on some music and let’s get roasting!
